Crispy Roasted Potatoes
Ingredients:
1
kg roasting potatoes (I used Maris Piper)
100g
duck/goose fat or butter or olive oil (I used olive oil)
Little
bit of flour for dusting
Salt
to taste
Method:
1. Peel the
potatoes and half them if they are small to medium sized
2. Put them
on a pan and add water and boil them
3. Add salt
4. Boil for 10
minutes. After that lift one out with a skewer and see if the outer edge is
fluffy. Run the point of the skewer along the surface – if it stays smooth, boil
for few more minute
5. Drain the
potatoes. Shake the pot back and forth a few times to fluff up the outsides.
Sprinkle with the flour, and shake so they are evenly and thinly coated
6. Pre heat
the oven 180c in fan oven and place the roasting pan in the oven
7. When the
pan is hot add the olive oil and heat the oil
8. Bring the
tray out and place the potatoes on the hot oil
9. They will
sizzle in the hot oil
10. Turn them
so that each potato is coated with fat
11. Place them
in single layer
12. Roast them
for 15 mins and then turn them over
13. Keep turning
over periodically until each side is golden and crisp
Sprinkle salt and serve
straight way
